From cooking to eating I enjoy all aspects of food. I remember being 14 and taking cakes to school that I would bake the night before and sell to my classmates. I guess you could say the entrepreneurial spirit started from a young age!
Does anyone specific inspire your cooking?
I’ve always taken inspiration from my parents, who introduced me to a number of restaurants and different cuisines from a young age. To this day I still have long winded chats with my mum and dad about new dishes to put on the menu and their input is always valued. Vault 13 is definitely a collaborative family venture albeit with some disagreements mixed in!
What is your favourite dish to make?
I’ve always enjoyed the patience and dedication that baking bread needs from start to finish. A good loaf of bread requires a coming together of multiple skills and a knowledge of when enough is enough. I suppose you could say baking bread is like running a business. Too little or too much of something and it will never grow.
What is your favourite dish to eat?
As a chef who works upwards of 50 hours a week the most simple answer would be anything that I don’t have to cook! However there is nothing quite as comforting to me then a well cooked, well seared steak with crispy fries. Serve that to me any day of the week and I’ll always be a happy man.
What made you open up Vault 13?
Ask anyone that knows me and I’m sure they’ll tell you that for as long as they can remember I’ve always wanted to open a restaurant. What Vault 13 has become today is nothing more than what we set out to do from day 1; open a restaurant where quality was never compromised and standards were always maintained. My family always supported my decision and provided resources for which I will be eternally grateful.

TNB was always first choice when it came to setting up a corporate account. Aside from it being where my family has banked for years, the familiarity and welcome you receive at the bank is second to none.
